Your Irish Fix

Who here likes Saint Patrick's Day? When we were little it was just another day you had to remember to wear green to school so you could avoid getting pinched. When you're older it's a day for drinking and celebrating the irish heritage you have, you know, way back in there somewhere.


One of my (many) hidden talents is my ability to find four-leaf clovers at the drop of a hat. I would irritate my friends who were actually irish with my effortless discovery of the charms.  Eventually we decided I must be part leprechaun to have such luck.




Here at the Sisters O'Fierce it is not only a day to drink more Guinness and Jameson, but to shower your co-workers with yet another themed holiday treat.  Who doesn't love the heart shaped cookies on Valentine's Day, the buche-de-noel around Christmas, the Martha Stewart Easter decorations that there is no way you could ever pull off? I love them. 


This is foolproof and delicious. Do you like pistachios? check. Apricots? check. The blasphemy that is white chocolate? check. (well, the Sisters O'fierce are squirming. We much prefer dark chocolate, but in the interest of THE IRISH FLAG, we'll have to go for something else this festive season.)


Here you have three beautifully simple tasks: melt some white chocolate. chop some pistachios. Dip some apricots and toss with pistachios. Is it not the easiest holiday themed treat you could bring to your office this month? I thought so. And your coworkers will appreciate the Irish in you. 


Ingredients
1 pound dried apricots (your all-natural sulfite free ones will be black, not orange, so in the interest of cute you should go with the conventional ones)
4 oz white chocolate, chopped and melted (I melted mine in the microwave on low, stirring occasionally. You can do this in a double boiler on the stovetop, too. Be careful not to get it too hot or it will separate, and then you'll have to start all over)
1/2 pound pistachios, shelled and finely chopped (the smaller they are the more complete the green coat on the white chocolate)


Process:
dip the apricots about 2/3 of the way in the melted white chocolate, sprinkling the last 1/3 with chopped pistachios. Let set on wax paper.
